Azimut Brut Nature Cava 2023, Penedès

Azimut was created by Assís Suriol (Suriol winemaking family) in the early 1990s to bring together Catalan farmers to create fresh and organic wines with minimal intervention.  In addition to estate fruit, grapes are sourced from the Marina del Garraf (coast) by the Bartra family, Conca del Riu Foix (interior) from the Freixedas and Colomer families, and Costers del montmell (mountains) from the Puig and Martí families.  Aged for 9 months in bottle with zero added sugar (dosage).  Effervescent bubbles, white pear and flowers, crushed rocks – crisp and fine.
