Amontillado is a fino or manzanilla wine produced within the D.O. Jerez-Xérès-Sherry (Avg. ABV 18%- 22%). This sherry oxidizes and matures in a slow, controlled process in oak barrels (min. 2 years) where the veil of flor has been broken. Amontillados that age for longer periods can be designated VOS or VORS. Amber in color with nutty flavors, tobacco and oaky notes. Rich and complex, dry and refined.
