Palo Cortado is a fino wine produced within the D.O. Jerez-Xérès-Sherry (Avg. ABV 20%-22%). It is like amontillado on the nose and oloroso in the mouth, a cross between the two. Palo Cortado starts out as a fino, but due to one or a combination of many unplanned reasons, doesn’t age under flor during the initial 2 years of aging. Rare and completely occurring accidentally, climatic and microbiological conditions impact the flor, resulting in a failure to develop normally. Palo Cortados that age for longer periods can be designated VOS or VORS. Mahogany colored, complex and smooth, with notes of bitter citrus and fermented butter. Delicate, aromatic and lingering.
