Fino

Fino is a dry, pale wine whose modern style emerged in Andalucia during the 18th century, when winemakers began to recognize and deliberately cultivate the qualities produced by aging wine under a natural layer of flor. Although wines had been exposed to this yeast veil for centuries, the 18th century marked a shift toward purposefully preserving and valuing biological aging as a defining characteristic of the wine.

Today, Fino is produced primarily in the D.O. Jerez-Xérès-Sherry and D.O. Montilla-Moriles. In Jerez, it is traditionally made from Palomino and fortified before aging, while in Córdoba it is generally made from Pedro Ximénez, which can reach sufficient alcohol naturally without fortification. In both regions, the wine is aged under flor, which protects it from oxidation and gives it its characteristic saline, yeasty, almond-like and herbal profile.

The character of Fino is also deeply connected to the albariza soils. These brilliant white, calcium-rich soils are largely composed of marine limestone and marl, formed from ancient marine sediments and rich in microscopic marine fossils. Their exceptional ability to absorb and retain water is particularly important in the hot, dry climate, helping the vines maintain freshness through the growing season. Wines grown on albariza are prized for their tension, freshness, and pronounced sapidity, qualities that contribute to the distinctive saline and mineral character associated with the finest Finos.

Fino is one of the great wine styles that Spain has contributed to the world, a unique and exceptional expression of wine, defined by biological aging and a character that is virtually impossible to reproduce elsewhere.
