The fortified wines of Andalucía, renowned worldwide as sherry, form the backbone of the appellation. While the region is also known for brandy and vermouth, over the last two decades there has been a concerted effort by winemakers to produce unfortified still red and white wines, harkening back to traditions past.

Aside from unfortified white wines made from Palomino Fino, look for recuperated varieties such as Vijariega, Tintilla, Jaén Tinto, Perruno, Palomino Negro, Mollar Cano, Mollar Tinto, Melonera, Palomino de Jerez, Cañocazo, Perruno, Malvasía, Pedro Luis, Vijiriega Blanca, Jaén Blanco, Castellano, Moscatel de Alejandría, Moscatel de Grano Menudo, Palomino Garrido, Mantuo de Pilas, Listán de Huelva and Pedro Ximénez. Select winemakers are also exploring international grapes such as Syrah, Merlot, Chardonnay, and even Pinot Noir.
