Cream
Cream sherry (a.k.a. sweet oloroso) is a dessert wine produced within the D.O. Jerez-Xérès-Sherry under a special category called Vinos Generosos de Licor.
Cream sherries are made by blending a dry sherry like oloroso with a sweet sherry such as moscatel or PX and are oxidatively aged. It can also be sweetened by adding arrope, reduced caramelized grape must. There are many styles of cream sherry, ranging from pale (from fino sherry), to medium (half sweet), to cream (oloroso blended w/ PX), to dulce (like port). There is also East India Solera, a style from Lustau that is lighter (oloroso blended w/ PX) because it is matured in the warmest part of the bodega. Dark, sweet, concentrated, and velvety, with roasted nut flavors.
