As part of the Poniente series of sherries by Patrick Mata and Alberto Orte from acquired mature botas from almacenistas, this fino comes from a system of four criaderas and one solera, with a median age of over 8 years, bottled en rama. The wines used to refresh the 4th criadera comes from organically-farmed estate vineyards, from a clonal selection of more than 200 ancient clones of palomino.  A classic, mature fino, with sourdough notes and Mediterranean herbal aromas. Zingy, zesty and chalky - beguiling.
