In the Spanish category of serious, ageworthy rosados, Ripa, by winemaker José Luis Ripa Sáenz de Navarrete is the only wine he produces, so it receives his total focus, expertise, and attention.  The fruit is from 30-year-old bush vines.  Uses the saignée method (gentle bleeding, 24 hour cold maceration) followed by aging for 30 months in used, neutral, French oak casks.  Due to the aging process, the wine has a pale-copper tinged hue, dried herbs and grapefruit, blood orange - flinty, oxidative, herbal, stony, salty - deeply satisfying.
