At the forefront of the exodus of the Cava D.O. is the Roca family who wish only to show the great potential and unique terruño of Penedès.  Fermentation in stainless steel with natural yeasts, then aged sur lie for a min. of 20 months. Creamy with lively acidity, apple and pear, bouncing bubbles.
