Named after prince Gisberto Pío de Saboya, an Italian nobleman who lived in Madrid, and aged for 12 years+, the wine starts as manzanilla, turns into a pasada, and then refortifies. So about a half-life of biological aging under flor, followed by oxidative aging. Almondy, saline, and olive briny.
