A biodynamic sparkler from Constantina Sotelo, an all-natural garagista in Cambados. Aquelarre is sourced from the family’s oldest plot on their farm. Vine ages range from 70 to 200 years old. Granite and limestone soils, fashioned in the ancestral method, 11 months in bottle before disgorgement, natural, unfiltered, dry, floral, flinty, fizzy and fabulously fun.
