Agostado is an unfortified white wine comprised of almost extinct varietals such as perruno, uva rey, and of course palomino. Aged oxidatively without a veil of flor, the wine nevertheless has a sherry-like character due to the extended aging in sherry botas.  As this is a young wine, Agostado is already showing rich and nutty characteristics, smoky and savory with an umami intensity.
