Biodiversity meets volcanic soils where terruño is the product of tradition, culture, and history of this ancient area. An unfined, unfiltered listán blanco from centenary vines in the black basalt and volcanic sand soil. Vines get braided in the traditional cordón trenzado method to promote airflow. Fermented in concrete tanks with wild yeasts, and no malo, preserving its sharp, natural acidity. Aged for one year in neutral oak foudres. Expect trademark citrus, sea salt brine, electric acidity and smoke. Packs a zippy punch which will soften with time.
