Bush trained Callet grapes under a luminous sky thrive in the polycultural environs of the red clay (ca vermell) soils of Mallorca. Fashioned from Els Ermassos, a single hectare vineyard planted in 1960 located near the town of Felanitx, and Es Pou de Sa Carrera, a .5 hectare vineyard near the town of Porreres planted in 1965. Co-planted with the vines are native apricot and carob trees and other herbs, rounding out the landscape. Fruity, light, fresh, and elevated. Sotil’s sensitivity shines sensuously.
