From a small vineyard planted in 2005 by Jonatan García Lima, Cruz Santa is made from a specific small plot of 20-year-old vines defined by clay-rich soils. Whole cluster, fermented with indigenous yeasts, and matured in a used 500-liter barrel for 10 months. Floral with chalky tannins and a wisp of smoke - volcanic, light and spicy, high acid and nuanced. Canary magic.
