In this vermouth, Patrick Mata is honoring his ancestors, dating back to a family recipe from 1880. This is a secret recipe developing over time, bringing the flavors of yesteryear into the present. The base wine is made from Doña Blanco and Godello. It is then macerated for 40 days with local roots, flowers, and herbs such as bitter orange peel, sage, thyme, and star anise before fortification with grape spirits. A complex vermut for mixing or sipping.
