Bodega Cauzón
The Saavedra family of Cortes y Graena, a tiny town located in the middle of the desert, own a small vineyard in the Sierra Nevada mountains of Granada. Ramón Saavedra stepped away from his hometown to become a chef, working up and down the Costa Brava coast until the vines beckoned - a logical next step to become a vinegrower, especially given the high altitude (1000m+), red rock, sandy, alluvial soils of his family parcel. Ramón planted an additional 4 hectares in 1999 and makes blends of international and native grapes. Due to organic farming practices, he has kept to natural winemaking and minimum intervention in the cellar since. Native yeast fermentations, no filtration or fining, and no additives of any kind, not even S02.
