Spain has a long tradition of producing sparkling wines, but the origins of modern Spanish sparkling wine date back to the 19th century. In the 1870s, winemakers in Sant Sadurní d’Anoia, in Catalonia’s Penedès region, began producing sparkling wine using the traditional method, inspired by the techniques used in Champagne.
This marked the beginnings of what would eventually become Cava, Spain’s most internationally recognized sparkling wine. Traditionally made from native grape varieties such as Macabeo, Xarel·lo, and Parellada, Cava became deeply rooted in the culture and winemaking traditions of the Penedès.
Over time, other traditional-method sparkling wines emerged from the same region, including Corpinnat and Clàssic Penedès. These wines continue to reflect the region’s long history of sparkling-wine production while placing a strong emphasis on local grapes, sustainable viticulture, and extended bottle aging.
Today, Spanish sparkling wines are enjoyed throughout the country, both for celebrations and as an accompaniment to food. They are a natural part of Spanish dining culture and are commonly served as an aperitif or paired with everything from seafood and tapas to festive meals.
