Pedro Ximénez
Pedro Ximénez is a dessert wine from Andalusia produced from overly ripe grapes which are dried in the sun (asoleo) to obtain a must with high sugar content. Asoleo concentrates the sugars and the natural acidity of the grapes. Pedro Ximénez that age for longer periods can be designated VOS or VORS. The result is a dark, velvety, syrupy wine, with sweet, dried, candied fruit of raisins, figs, dates, toffee, licorice and dark chocolate.
