Moscatel

Moscatel is a dessert wine made in many parts of Spain.  In Andalusia, moscatel is produced from overly ripe grapes which are dried in the sun (asoleo) to obtain a must with high sugar content.  Asoleo concentrates the sugars and the natural acidity of the grapes.  There are two styles in Andalusia, moscatel pasas made in asoleo method and moscatel dorado made from fresher juice and typically aged in stainless steel.  Moscatels are very sweet, aromatic, and floral, displaying hints of jasmine and orange blossoms, with honeyed, raisin flavors.   Recently, a select few producers are producing unsweetened white wines to add to the mix.
