Fino

Fino is a dry, pale wine produced within the D.O. Jerez-Xérès-Sherry (Avg. ABV 15%- 18%).  It is made from the palomino grape and biologically aged under flor, a veil of yeast that prevents air contact with the wine.  A product of the solera system, finos spend a minimum of two years in barrel.  Saline, yeasty, and minerally with aromas of Mediterranean herbs, almonds and fresh dough.
