Manzanilla
Manzanilla is a dry, pale wine made from palomino fino grapes produced within the sherry triangle exclusively made in the town of Sanlúcar de Barremeda, situated at the mouth of the Guadalquivir river.
The unique, climatic conditions forged by the convergence of the Guadalquivir river, the Marisma wetlands, and the Atlantic Ocean are responsible for higher levels of humidity and milder temperatures than Jerez. Poniente and Levante winds carry the sea breezes into the bodegas, promoting the growth of flor (film of yeast), enabling biological aging. Manzanillas must be aged a minimum of two years in barrel.
Manzanillas are delicate, fresh, and floral, with hints of chamomile and almonds. Manzanilla wines that age for seven years in barrel become more oxidized due to a weakening of the flor. These wines are known as Manzanilla Pasadas and are more richly flavored and structured.
