Canary Mule

CANARY MULE

2 oz BLAT vodka
½ oz lime juice
3 oz ginger beer OR ginger syrup + club soda
Lime wedge

Copper mug or highball glass, jigger, bar spoon, ice, saucepan, wooden spoon

Fill a copper mug or a highball glass with ice.  Add lime juice and vodka.  Pour in ginger beer.  Stir gently with a bar spoon.  Garnish with lime wedge.

* For a sweet and spicy variation, add 1 oz ginger syrup and 3 oz club soda in lieu of ginger beer.

GINGER SYRUP

1 cup granulated sugar
1 cup water
1 cup fresh ginger, peeled and sliced into ¼ inch pieces

Combine water and sugar in a non-reactive saucepan on med. heat.  Stir with a wooden spoon until sugar is completely dissolved.  Add ginger and raise heat, bringing saucepan to a simmer.  Reduce heat to low, cover saucepan, and steep for 15-20 minutes.  Strain out the ginger and allow syrup to cool.  Store in an airtight jar and refrigerate for up to 2 weeks.
