Cava

Cava is Spanish sparkling wine made in the traditional method, where there is a secondary fermentation in the bottle, just like in Champagne.  The classic grapes used are xarel-lo, parellada, and macabeu, but other grapes can be used such as chardonnay and pinot noir.

Cava comes in a variety of styles such as semi-seco, brut, extra brut, and brut nature. Cava rosado is usually made by blending in a red varietal such as trepat, monastrell or garnacha.  There is a whole category of vintage and aged cavas on the lees and are worth seeking out.
