Ramiro Ibáñez is the mad scientist behind the unfortified palomino fino beauties that leave no question as to his vision and sanity when it comes to making distinctive elegant vintage wines while preserving some of the lost traditions of Jerez. El Carrascal is sourced from a tiny 0.7ha vineyard called Las Vegas. Planted in 1903, grapes pressed whole cluster in old botas. Racked and aged under partial flor before bottling. A vertical wine that Ramiro would say you feel in the front of the mouth - voluminous, lengthy, sapidity supreme.
