Nacho treats these ancient vines Palomino from a “lost” vineyard site beautifully.  Hand-harvested, destemmed, ferment with wild yeasts with a week of skin contact, then tinajas (amphorae) for five months.  Of course, no fining or filtration, or added S02 – Nacho’s preferred formula. High-alt. blanco with a juicy citrus and saline attack, herbal and stony.  The D.O. doesn’t approve of using Palomino, but Nacho is Nacho.  Malas Uvas (evil grapes) indeed.
