Parés Baltà is a family winery with a long tradition of winemaking going back to 1790 in Penedès.  Espígol is made with grapes from two plots in the Alts d’Ancosa estate. Hand-harvested, gentle pressing, cold fermented in stainless steel tanks for 17 days, then aged for five months on the lees in demijohns. Floral, peachy, creamy, salty and satisfying.
