The importance of the Albillo Mayor grape in this part of Spain is not lost on Jorge Monzón Pascual & Isabel Rodero.  The field blend of grapes is picked from centenary vines (some ungrafted) growing on sandy clay, gravel, and limestone soils.  Hand-harvested, whole cluster, foot-trodden, long, slow fermentation (10 months!) with indigenous yeasts, no bâtonnage or racking - the wine is French oak barrel aged for 35 months!  Salty, stony, smoky, flinty, creamy, and rich – a contender for best white wine in Spain.
