Seriously aged dessert sherry crafted from Pedro Ximénez grapes which undergo a week of asoleo, where grapes are sun-dried to concentrate sugars. The wine rests in stainless steel for a year, aged in American oak botas for 27 years before release. Figs, dates, raisins, toffee, roasted coffee. Velvet and viscous, syrup, chocolate, brown sugar, and orange. This is the nectar of choice for those flying cherubs up in the heavens.
