Basque cider made by brothers Hur and Joseba Astarbe. Made from blending of native apples. Apples are ground in a matxaka mill, pressed, and fermented with native yeasts in kupelas (old, large oak cider barrels) and rested on its fine lees for two months. Bottled unfined and unfiltered. Sour green apple, citrus zesty, mineral, dry and tart - Basque effervescence.
