Ponce blanco is made possible due to the diligent effort and dedication by winemaker Juan Antonio Ponce to recuperating indigenous varieties in Manchuela. Sourced from roughly 10 hectares (six plots) of old bush-vines (40-60 years avg. age). Grapes are hand-harvested, whole cluster fermentation with wild yeasts, aged on its fine lees for 8 months in a combo of neutral French oak barrels and vats. Salinity, minerality, acidity - creamy, savory - mouthwatering.
