From 4th gen. Catalan winemaker Toni Carbó, The Pagès Content wines are designed to honor the Catalan farming families of the past who worked the land. Grapes direct pressed and co-fermented for one month with wild yeasts inside a cairons, an O.G. Catalan underground fermenter lined with tile, used by generations of La Salada familia, followed by an additional 4 months aging.  Two weeks of skin contact maceration. No fining, filtration or added S02.  Citrusy and stony, mineral-driven and zesty, textured and unbridled.
