From winemaker Melanie Hickman of Bodegas Bhilar, the fruit for Sasikume is sourced from a tiny parcel (0.4 ha) in Elvillar, planted in 2018. Biodyhamically farmed and plowed by horse, whole cluster, fermentation in concrete tanks, aged a month on the fine lees before racking and bottling.  Light and airy, tart, wild, flinty, and juicy with popping acidity - tantalizing.
